Cave B 2012 Cuvée Blanc, $25

Cave-B-2012-Cuvee-BlancCave B Estate Winery is located in the Ancient Lakes of Columbia Valley AVA, a region especially well-known for producing outstanding white grape varietals.  Under the deft hand of winemaker Alfredo “Freddy” Arredondo (formerly a chef), Cave B’s estate-grown wines are crafted using minimalist interventionist techniques: no added enzymes, sugars or acids.

This dazzling white blend of Semillon (79%) and Sauvignon blanc (21%) was fermented in stainless steel tanks and offers up rich and refreshing purity of fruit in every sip.

Nose: The floral bouquet of honeysuckle and clover abounds with nectarine and citrus notes.

Taste: Creamy and full-bodied with complex honeyed flavors of satsuma orange, apricot and white nectarine that lead to a dry finish of lemongrass and spice.

Recommended pairing: Seared Diver scallops served with porcini mushroom crust, risotto and asparagus.
